Most sparkling wines undergo a second fermentation. This is not the case with the Rurale method. The first fermentation is stopped under pressure, so that the resulting carbon dioxide in the wine binds. That sounds awfully technical now, but it causes the sparkling wine to keep an extremely bright fruit aroma. In that case, gooseberries literally fly around your ears. We found this wine, tried it and it was so cool that we absolutely had to take it. A truly great Sparkling wine!
